A great recipe for using up your surplus of figs.. 

fig-chutney-france3kg figs, chopped into small pieces

2kg sugar

1kg mixed golden raisins and sultanas

6 red onions, chopped

2 litres good red wine vinegar

4 tsp cayenne pepper

4 tsp paprika

4 tsp all spice

2 tbsp grated fresh ginger

4 red chillies, diced very finely (seeds in or out depending on taste)

12 garlic cloves, crushed

Salt and pepper to taste

 

In a larger pan, fry the finely diced red onion. Add all the ingredients and bring to the boil. Simmer for around 2 hours or until it is quite thick. Taste for seasoning and adjust if necessary before placing into sterilised jars.


This chutney improves with age.
