MAKES 10-12

 

200g caster sugar

2 large eggs

Seeds of 1 vanilla pod or

2 drops of vanilla extract

500g plain flour

Pinch of salt

4 tsp baking powder

1 tsp bicarbonate of soda

8 tbsp unsweetened cocoa powder

200g plain chocolate chips

500ml milk

180ml sunflower oil

 

 

METHOD

Preheat the oven to 190°C.

Sift the flour, baking powder, bicarbonate of soda, cocoa powder and salt into a large bowl.

Stir in the sugar and chocolate chips.

Beat together the egg, vanilla extract and milk.

Add the oil, stirring to mix.

Pour the wet ingredients onto the dry ingredients, stirring until just combined.

Do not over mix - the batter should still be a little lumpy.

Spoon the mixture into the muffin cases and bake for 20 to 25 minutes.

Cool on a wire rack.
