SERVES 6

 

600g fusilli pasta spirals

500g fresh or frozen spinach

3 cloves  of garlic crushed

300g crème fraiche

Juice of 1 lemon

 


1. Cook the pasta following the packet  instructions.

2. Put half the spinach in a food processor with the garlic, and crème fraiche and whizz until it is a smooth sauce.

3. Drain the pasta thoroughly and return to the pan over a low heat. Stir in the sauce and remaining spinach, and cook until the spinach has wilted.
