SERVES 6

 

6 sea bream (about 350g each), scaled and gutted

12 tsp dijon mustard

6 tsp fennel seeds

90ml olive oil

 

 

LEMON SAUCE

60ml lemon juice

225g chilled unsalted butter, diced

salt and cayenne pepper

zest of two lemons

 

 

METHOD

Slash the sea bream.

Combine the mustard and fennel seeds with the oil then spread over both sides of the fish.

Cook on a medium hot barbecue for 10 to 12 minutes, turning once.

Heat the lemon juice, whisk in the butter until creamy, and sprinkle over the zest and cayenne pepper.
