2 tbsp olive oil

1 medium onion, finely chopped

1 large garlic clove, crushed

2 tsp ground cumin

2 tsp ground coriander

1 tsp ground turmeric

230g finely chopped mushrooms

two cans of 400g red kidney beans

60ml chopped fresh coriander

salt and freshly ground black pepper

Greek yogurt to serve

buns or pitta bread




Heat the olive oil in a frying pan and cook the chopped onion over a moderate heat, stirring until softened.

Add the garlic and spices and cook for a further minute, stirring constantly.

Add the chopped mushrooms and cook, stirring until softened and dry.

Remove from the heat and empty into a large bowl.

Drain the beans thoroughly, place them in a bowl and mash well with a fork.

Add to the mushroom mixture with the chopped coriander, season and mix well.

With floured hands, shape into burgers, brush with olive oil and carefully cook for 8 to 10 minutes on a medium heat, until golden brown.

Serve with plain yogurt.
