Potato wedges with a cajun dip by Nikki Legon

Potato wedges with a cajun dip...

SERVES 6

 

4 large baking potatoes or 6 medium potatoes (or sweet potatoes)

sunflower oil for brushing

2 tbsp cajun seasoning

 

 

DIP

125g cream cheese (St Moret)

150ml crème fraîche

4 tbsp chives, chopped

salt and freshly ground black pepper

cajun seasoning to taste

 

 

METHOD

Preheat the oven 200°C.

Scrub the potatoes and cut each one into 6.

Place in a pan of boiling salted water and cook for 5 to 10 minutes.

Drain well and dry on a tea towel.

Put the oil in a baking tray and add cajun seasoning mix to taste.

Toss the wedges to coat evenly. Arrange in rows, sitting upright on their skins.

Bake for 30 to 35 minutes until tender and golden.

To make the dip, place the cream cheese, crème fraîche and cajun seasoning into a bowl.

Mix well, season and add the chopped chives.
