6 small racks of lamb

 

FOR THE MARINADE

100ml light olive oil

4 tbsp of chopped mint leaves

3 garlic cloves, crushed

1 tsp paprika

1 tsp ground cumin

salt and pepper

 

 

CUCUMBER RAITA

1/2 a large cucumber, coarsely grated

200g thick, plain yogurt

1 garlic clove, crushed

chopped mint to taste

lemon juice to taste

 

 

 

METHOD

For the raita, mix the ingredients together and season to taste.

Mix all the marinade ingredients together and rub into the lamb.

Leave to marinate overnight if possible or for a couple of hours minimum.

Cook on the barbecue until cooked through and caramelised.

Serve with a lamb’s lettuce salad, potato wedges and cucumber raita.
