Small whole duck weighing around 2kg

2 passion fruit

Juice of 2 oranges

1 tbsp light brown sugar

1 tbsp soy sauce

2 star anise

 

 

METHOD

Heat the oven to 190°C.

Remove any lumps of fat inside the cavity of the duck, place on a rack in a roasting tin and put the orange halves inside.

Pierce the skin with a skewer all over to let the fat run out.

Roast in the oven for 70 to 90 minutes, baste several times during cooking.

Remove and allow to rest, covered with foil, for 15 minutes before carving.

 

 

TO MAKE THE SAUCE:

Halve the passion fruit and scoop out the fruit. In a pan, add to the sugar, star anise, orange juice and soy sauce.

Bring to the boil and let it bubble away until reduced by two- thirds, season.

Slice the cooked duck, and pour the sauce around. Serve with creamy mashed potatoes and glazed carrots.
