SERVES 6

 

3 tbsp light olive oil

3 garlic cloves, peeled and crushed

3 tbsp brown sugar

3 tsp dried chilli

6 chicken fillets, skin slashed so the sauce can penetrate

1 large orange, zest and juice

1 lemon, zest and juice

salt and freshly ground black pepper

 

 

METHOD

In a large bowl, combine the oil, sugar, chilli and garlic.

Add the juice and zest of the orange and lemon into the sauce.

Season and leave to marinate for at least 30 minutes or up to 2 hours.

Place the chicken on a medium hot barbecue and cook for about 12 minutes.

Turn regularly and baste with the sauce.

Serve on a salad of avocado, lettuce, tomato and green beans, and drizzle the remaining marinade over.
