3 tsp ground cumin

3 tsp ground coriander

3 tsp mixed spice

3 tsp dried oregano

6 tomatoes halved

6 salmon fillets

150ml Noilly Prat® optional

 


METHOD

Mix all of the spice and rub into each salmon fillet, rest for 1 hour.

Brush each fillet with olive oil and place into a baking tray.

Put the halved tomatoes in with the salmon and brush with olive oil, sprinkle with oregano.

Cook on a medium heat for around 20 minutes until just cooked being careful not to over-cook or it will be dry.

You can use the pan juices to make a stock by adding the Noilly Prat®, stir, cook for 2 minutes and add a knob of butter to finish.
