Chinese spare ribs

(serves 4)

1.5 kg spare ribs

Sauce

2 tsp five spice powder

2 tbsp brown sugar

2 tbsp soya sauce

2 tbsp hoi sin sauce

2 tbsp rice wine

2 tbsp tomato ketchup

2 garlic cloves creamed (chop cloves, sprinkle with a little salt and using the flat blade of a knife work into a paste)

1 tbsp finely grated ginger

2 tbsp honey

Chinese-ribs


Put all or the sauce ingredients except the honey in a small pan and heat very slowly for 15 minutes. Add the honey, mix and reserve. Place your ribs in a saucepan and cover with salted water. Cook for 20 minutes on a medium heat. Drain the water and place the ribs into the sauce. Marinate overnight. Remove the ribs from the marinade and cook on the barbeque. Reheat the sauce to boiling and serve with the ribs.
