2 large aurbergines, sliced lengthways

3 large courgettes, sliced lengthways

3 yellow peppers and

3 red peppers, halved

You can also add asparagus and spring onions




1 shallot, finely chopped

1 red fresh chilli, finely chopped

3 garlic cloves, finely chopped

8 tbsp light olive oil

a few rosemary sprigs, very finely chopped

2 tbsp balsamic or sherry vinegar

salt and pepper to taste




For the dressing, combine all the ingredients in a screw top jar and shake well.

Place the oil and salt and pepper into a baking tray and toss the vegetables well to coat evenly.

Either cook on the barbecue or in the oven until lightly charred and tender.

Place onto a large serving platter and pour over the dressing while still warm.
