Cajun chicken breasts with vibrant mango salsa by Nikki Legon

SERVES 6

6 skinless chicken breasts

2 tbsp light olive oil

3 tbsp crème fraiche

2 tbsp Cajun spice or jerk seasoning

 

SALSA

2 ripe mangoes skinned and diced

1 large avocado skinned and diced

1 large red pepper deseeded and diced

1 small red chilli deseeded and diced very small

15g chopped coriander

1 lime, juice only

 

1) Mix the spices with the crème fraiche, coat the chicken then rest for one hour.

2) Place into a hot oven and cook for 15 to 20 minutes.

3) Prepare the salsa, place all of the chopped ingredients into a serving bowl, mix well adding the lime juice and season.
