One of my husband’s favourite lunches, topped with some bacon and a fried egg...

3 tbsp oil

Any leftover onions or leeks

1 ½ kilo mashed potato or finely chopped roast potatoes

750g cabbage or brussel sprouts, chopped

Salt and pepper

 

 

METHOD

Mix the leeks or onions and cabbage or brussel sprouts into the potatoes.

Season to taste.

Dust with flour and shape into patties.

Add the oil to the frying pan and cook until golden brown on both sides.
