SERVES 4

 

350g basmati rice

3 tbsp ghee

1 cinnamon stick

6 to 8 cardamom pods, crushed

4 cloves

1 onion halved and sliced

1 tsp sugar

130g peas

1 tsp salt

 


METHOD

Rince the rice 3 times and leave to soak for 30 minutes then drain.

Heat the ghee, stir in the cinnamon stick, cardamom and cloves. 

Add the onion and sugar, fry until golden.

Add the peas followed by the rice and stir one minute.

Pour in 600 ml of water, add the salt, stir once and bring the liquid to the boil.

Reduce the heat and allow to simmer for 15 to 20 minutes until the liquid has absorbed.

Turn off the heat, cover with a tea towel and the lid and let it steam for 10 minutes.

Remove the cinnamon stick, cardamom pods and cloves and serve.
