Green bean salad with mushrooms & crispy fried shallots
Ingredients
1kg trimmed green beans salt
3 shallots, peeled and sliced thinly
3 tbsp milk
1 tbsp flour
2 tbsp crème fraîche
50g Parmesan cheese, grated
freshly ground black pepper
1 finely chopped chilli (optional)
METHOD
Put the sliced onions in the milk, leave for 30 minutes.
Bring a pot of salted water to the boil, add the green beans and cook until just beginning to soften.
While the beans are cooking, fry the mushrooms. Strain the shallots, toss in a little flour and deep fry till golden. Drain the beans, add the mushrooms, crème fraiche and Parmesan.
Place into a warm serving dish and pile the crispy shallots on top. Sprinkle the chilli over if using.
