Salmon and avocado appetiser by Nikki Legon

A lovely light and pretty start to any meal...

SERVES 6

 

3 ripe avocados

3 small spring onions, finely diced

Juice of 1 lime or lemon

100g cream cheese

1 tsp cayenne pepper

Freshly ground black pepper

6 slices smoked salmon

Chopped salmon or cooked prawns

Dill to decorate

Toasts or grissini for serving

 

 


METHOD

Peel the avocados and remove the stone, spoon out the flesh and put into a mixer.

Add the onions, lime juice and cream cheese and mix until smooth.

Season with cayenne pepper.

Chop up small pieces of salmon, or you could use any leftover cooked prawns, and stir them into the avocado mix.

Check the seasoning and adjust with salt and pepper and lime or lemon juice.

Place into the glasses and top with the smoked salmon, decorate with dill.

Serve with toast or grissini.
