Prawn and mango salad...

SERVES 6
For the salad
4 baby gem lettuce
Red cabbage, finely sliced
6 bacon rashers
1 1/2 kg prawns, peeled and de-veined
2 large ripe mangoes, peeled and cubed
2 large avocados, peeled and cubed
METHOD
Wash the salad leaves and dry. Mix with cabbage slices and place onto a large flat platter .
Fry the bacon until crispy then drain on paper towels. Chop into small pieces.
Now arrange the prawns, avocado and mango over the salad leaves and sprinkle with the bacon.
FOR THE DRESSING
1 very ripe mango, peeled and chopped
2 tbsp crème fraîche
3 tbsp lime juice
1 tbsp sweet chilli sauce
1 tsp grated ginger
1 tbsp light soy sauce
METHOD
Blend the chopped mango, add all of the other ingredients and blend again.
Drizzle over the salad.
