1 kg good quality minced beef

2 onions, very finely chopped

2 garlic cloves, very finely chopped

100g white breadcrumbs

50g hard cheese

4 tbsp chopped flat leaf parsley

A good glug of  Worcestershire sauce

A splash of Tabasco sauce

Sea salt and freshly ground black pepper

2 large eggs, lightly beaten

4 tbsp olive oil

 

 

DIP

3 small pots of Greek yogurt

2 lemons, juice only

 

 

METHOD

In a large bowl mix the minced beef with the sauces, onion, garlic, breadcrumbs, cheese and chopped parsley until completely combined.

Season well and add the beaten egg to bind.

Cook a small piece to check seasoning, add more if necessary.

With damp hands, shape into balls, place on to a large plate and chill for 30 minutes.

Brown the meatballs all over in a large frying pan then place in the oven on a medium setting for 12 minutes or until cooked through.

Mix the lemon juice into the yogurt.

Place the meatballs onto plates and serve with the yogurt.

 

 

TIP

If you want to serve these hot on your picnic, put the meat balls into a wide, open-neck flask.
