Honey grilled pears with gorgonzola and walnuts recipe

 

 

(Serves 4)

4 comice pearsgrilled-pear

300g watercress and salad leaves

220g gorgonzola or blue cheese of your choice

60g walnut halves

Half a lemon( juice only)

1 tbsp honey

Freshly sliced rustic baguette

 

Dressing

3 tbsp walnut oil

3 tbsp light olive oil

1 tsp mustard

2 tbsp vinegar (of your choice)

Pinch of sugar

Salt and freshly ground black pepper

 

METHOD

Mix all the dressing ingredients together and reserve (I find it easy to place everything in a jam jar and shake). Cut the pears in half and remove the core, cut into thick wedges. Mix the honey and lemon juice together, brush this onto the pear flesh. Place the watercress, salad leaves and freshly sliced bread onto a large plate. Cook all sides of the pears on the barbeque for 2-3 minutes. Arrange on top of the salad. Crumble the cheese onto the pears and sprinkle with walnuts before drizzling with dressing.
