Healthy Spring Rolls by Nikki Legon

These spring rolls make a refreshing change to the usual fired variety...

 Serves 6

FOR THE SPRING ROLLS

16 rice wrappers (galette de riz) large size

Salad cleaned, dried and shredded

1 bunch of mint leaves sliced

4 chicken breasts cooked and diced

 

DIP

4 tbsp of fish sauce

1/2 cup of water

4 tbsp of fresh lime juice

1 clove of garlic minced

3 tbsp of suger

2 tbsp of sweet chili sauce

 

For the dip, mix the ingredients in a small bowl.

For the spring rolls:

1) Mix the salad, chicken and mint leaves together.

2) Fill a large bowl with hot water and dip the rice paper in for 1 second then cut in half.

3) Lay the wrapper flat. In the centre place a little of the salad and chicken mix. 

4) Fold up the rounded end at the base then fold uncovered side inwards rolling gently to form a cylinder shape. 

5) Repeat with remaining ingredients.

6) Serve with the dip.
