SERVES 6

 

3 aurbergines, sliced lengthways into thin slices (you need 12 slices)

3 large red peppers,

sliced into 4 lengthways

Feta cheese – 12 slices

 

 

VINAIGRETTE DRESSING

6 tbsp olive oil extra virgin

2 tsps of balsamic vinegar

1/2 a lemon, juice only

1/2 tsp of grain mustard

1/2 tsp of honey

 

 

METHOD

Brush the aubergines and peppers with olive oil and grill until soft.

Place a red pepper onto the aubergine, lay a thin slice of feta cheese down the centre and roll up.

Mix the vinaigrette ingredients together and serve.
