Crudités served with a healthy hummus dip and pitta bread by Nikki Legon

400g jar of chick peas (pois chiches) drained and rinsed

2 cloves of garlic crushed

4 to 5 tbsp of freshly squeezed lemon juice

100g low fat thick yogurt

Salt and pepper to taste

Paprika to sprinkle

 

 

1) Place all the hummus ingredients into a food processor and blend together to make a purée, season well adding more lemon juice to taste.

2) Pour into a serving bowl and sprinkle with paprika.

3) Slice carrots and cucumber or any vegetables you fancy, and stand up in a tall glass.

4) Serve with warmed pitta bread.
