Tiramisu recipe 

Serves 8

4 eggstiramisu
4 tbsp caster sugar
Few drops of vanilla essence
500g mascarpone
36 sponge fingers
350ml very strong espresso coffee
8 tbsp of marsala or kahlua
1 tbsp cocoa powder
Grated chocolate

1. Separate the eggs. Beat the egg yolks with the sugar and vanilla essence until thick and creamy.
2. Add the mascarpone and beat well.
3. ln another bowl, beat the egg whites until stiff, then fold them into the mascarpone mixture.
4. Mix the coffee with the marsala or Kahlua in a bowl and dip in each biscuit, plain side only, for a second or two.
5. Line the bases of 8 glass bowls with the biscuits, top with the mascarpone mix and then add another layer of biscuits and another layer of the mascarpone.
6. Just before serving, finish with a dust of cocoa powder and grated chocolate.
