Dessert for Nikki's Chinese feast

 

Deep fried apple & banana recipe

 

3 bananas, peeled and cut diagonally

3 apples, peeled and quartered

200g plain flour

150g cornflour

1 tsp baking powder

1 tsp custard powder

300ml ice-cold sparkling water

1 1/2 tsp sesame oil

300g caster sugar

6 tbsp water

5 tbsp white sesame seeds

sunflower oil for frying

vanilla custard and chocolate sauce

Method

For the fritters, sift the flour, cornflour, baking powder and custard powder into a bowl. Add the sesame oil and sparkling water, beat to a smooth batter. Add the apple and banana and coat generously.

Have a bowl of ice-cold water ready. Heat the sunflower oil - preferably in a deep fat fryer or half fill a heavy bottomed wok. Once hot, add the banana and apple and cook till golden. Drain on paper towels.

For the caramel sauce, place the sugar, water and sesame seeds into a saucepan over a low heat. Cook until all the sugar has melted. Increase the heat to bring to the boil and continue cooking without stirring until the mixture becomes a light caramel colour. Remove the caramel from the heat and add the banana and apple fritters using a fork one at a time. Coat all over then dip into the ice-cold water and leave to drain on a baking wire rack. Serve on vanilla custard with chocolate sauce.
